From the Field to Your Door

What is "dry aging"?

When your beef is sent to the abattoir, it is hung for a minimum of 14 days to dry age. This dry aging process dates back thousands of years. It is the best way to enhance the flavor and tenderness of your beef. During this process approximately 4% of the weight lost is in moisture. 

Hanging Weight vs What's in Your Freezer

The "hanging weight" is the weight of the beef when it is first hung before the dry aging process and the removal of the excess fat and bone from the beef. On average the weight of your beef (take home) is approximately 60% of the hanging weight.  This take-home weight can vary depending on how you order your cuts of beef. The cost of your whole, side or quarter is based on this "hanging weight", which also includes the personalized cuts and individual packaging of your beef. 

Your Beef, Your Way

When ordering your side of beef, you have the opportunity to customize your beef to your specifications. This gives you the option of how much of your beef you would like in steaks, roasts or ground and how you want them cut. 

Ordering Process

First Time

We understand that customizing a beef order; while it is a great investment, can also be intimidating at first. We are here to help. We encourage all of our customers to call us with any questions or concerns about their order. 

Ordering beef in quarters or a side is very rewarding but there are still a few restrictions and guidelines to work through

Restrictions

Ordering your beef by the quarter will give you the ability to customize your order. However, there are still some limits to your customization.


Each quarter comes from the same side of beef. This means that certain cuts have to be shared equally with another customer. For example, if one customer wants to order T-Bone steaks, the other cannot order Striploins. When ordering a quarter, steak thickness is set at 1 Inch in order to ensure equal portions to each customer. With this in mind, we work with customers to fill orders to the best of our ability. 




Availability

Right now, beef is in high demand, especially in bulk orders. We understand that having your beef in a timely manner is important. We also understand that serving you our best quality beef is even more important. Depending on when you place your order and when our beef is being sent to the abattoir, may result in a bit of a wait. The high demand for premium grass-fed beef also plays a role in wait times. Delivery Radius

Serving Southwestern Ontario & GTA

In staying committed to our customers and their experience, Cahill - Shore Livestock offers free delivery on orders within a 150km radius of the ranch. That means we are proudly serving Windsor and Peel to the GTA with premium grass-fed beef including free delivery.


Beyond the delivery radius will also receive a delivery option with a small, calculated fee.
